To make these easy peasy fruit scrolls, I made the dough in my bread machine (using a cinnamon scroll pastry recipe). Then, roll out your dough on a lightly floured surface, spread a jar of fruit mince on top. Roll into a long log and cut into scrolls. I covered mine with cling wrap (sprayed with oil to stop it sticking) and a tea towel, to double in size (about 30 mins). I then brushed with a little meltled strawberry jam and bung them in the oven till they were puffy and golden. Let them cool on a rack before dusting with icing sugar. Easy, peasy Chrissy yumminess.............. |
